Ingredients: 500g sausage meat 2 dried figs, chopped 2 dates, chopped 50g raisins, chopped 10 slices of pancetta Sherry Salt and pepper
Method: Soak chopped dates, figs and raisins in sherry for 30 minutes.Remove sausage meat from the skin. Bind together with sausage meat and salt and pepper to season. Roll out a layer of cling film and place slices of pancetta in the centre. Roll the mixture into a sausage shape and place onto the pancetta. Roll up and ensure the cling film is waterproof before poaching in water for 20 minutes. Remove cling film and fry in a little oil until golden brown. Place on a chopping board, slice and serve!
