Pigs in Blankets

500g sausage meat
2 dried figs, chopped
2 dates, chopped
50g raisins, chopped
10 slices of pancetta
Salt and pepper

Soak chopped dates, figs and raisins in sherry for 30 minutes.Remove sausage meat from the skin. Bind together with sausage meat and salt and pepper to season. Roll out a layer of cling film and place slices of pancetta in the centre. Roll the mixture into a sausage shape and place onto the pancetta. Roll up and ensure the cling film is waterproof before poaching in water for 20 minutes. Remove cling film and fry in a little oil until golden brown. Place on a chopping board, slice and serve!
